This fun variation on the classic whiskey cocktail pairs smoky bourbon with a homemade brown sugar cinnamon simple syrup and chocolate bitters to create a s’mores old fashioned.

Nothing could be a more natural pairing than a smoky old fashioned and everyone’s favorite campfire treat – s’mores.
It can be enjoyed anytime of year, but I find myself making them most often during the fall. For some reason it hits just right on a chilly autumn night.
Because the old fashioned is a straightforward cocktail, I kept it simple when making my “s’mores” version. I mostly relied on a brown sugar cinnamon simple syrup that only takes minutes to make, and flavored bitters for the chocolate notes.

It’s a great dessert cocktail, especially if you garnish it with a s’more on the edge of your glass instead of just a skewered marshmallow. Who doesn’t love a sip and a sweet treat?!?
For another great fall variation, try the apple old fashioned made with apple cider. And once December hits, I highly recommend switching to the Christmas old fashioned, which has some delightful notes of pine and cranberry.
Ingredients

- Whiskey – Bourbon goes best in this old fashioned. I like Woodford.
- Simple Syrup – I prepare a quick brown sugar and cinnamon simple syrup. You can substitute a store-bought version.
- Bitters – To bring the chocolate notes, add a few dashes of chocolate bitters. I really like the Aztec Chocolate bitters because it brings some extra smokey notes reminiscent of s’mores.
- Garnish – Toasted marshmallows on a skewer or balance a prepared s’mores on the edge.

Tips
- Toast your marshmallow right before serving. Use a kitchen torch if you have one, or roast under your oven’s broiler.
- Let the syrup cool completely. Before adding the brown sugar syrup, be sure that it has completely cooled, otherwise your drink ice will melt too fast and your drink will be diluted.
- Use good quality bourbon. The liquor is the main star of this cocktail, so you’ll want to use the good stuff. Check out my list of best whiskey for an old fashioned for ideas.
- Get creative with the leftover syrup. Any extra brown sugar syrup you have can be used in other cocktails, lattes, teas, or even to make cold foam.

S’mores Old Fashioned

Ingredients
Brown Sugar Cinnamon Syrup
- 1 cup Water
- 1 cup Light Brown Sugar
- 2 Cinnamon Sticks
S'mores Old Fashioned
- 2 ounces Bourbon
- .75 ounce Brown Sugar Cinnamon Syrup
- 2-3 dashes Chocolate Bitters
- 1 Block of Ice
- 1 Toasted marshmallow
Instructions
Brown Sugar Cinnamon Syrup
- Add all ingredients to a sauce pan and bring to a gentle boil, then reduce to a simmer for 5 minutes.
- Remove from heat and allow to cool completely before using in cocktail. Transfer leftovers to a container with a lid and store in the fridge.
S'mores Old Fashioned
- Add a large block of ice to a lowball glass.
- Add the bourbon, simple syrup, and bitters. Stir with a bar spoon for about 20 seconds.
- Garnish as desired and enjoy.
