This eye-catching, fruity, layered rainbow cocktail tastes like a tropical paradise in a glass.

Sometimes you need a vacation, but all you have the time and budget for is a backyard happy hour. No problem! You can make a drink that will transport you to an island beach with just one sip.
If you’ve been a reader long, you know that layered cocktails and shots are kind of my thing. They’re stunning, fun to post on social media, and easier to make than you might think.
In my opinion, the rainbow paradise is perfect for beginners! After you’ve mastered it, next try a snickers shot or a jam donut shot.
Ingredients
- Grenadine – This cocktail is traditionally made with Rose’s grenadine. You can substitute real grenadine, but the color will look quite different.
- Pineapple Juice – I keep my home bar stocked with small cans of Dole pineapple juice.
- Malibu – Malibu coconut really brings the tropical flavor to this cocktail.
- Blue curaçao – This liqueur gives the top layer it’s bright blue color.
- Water – Water is used to thin out the blue curaçao so that it will float on top. Without it, you can not layer properly.

Tips
- Use pebble ice or crushed ice for easy layering.
- Make it stronger by adding some light rum to the blue curaçao layer.
- Serve in a hurricane glass or a pint glass.

Rainbow Paradise Cocktail
Ingredients
- ice
- 1 oz grenadine
- 4 oz pineapple juice
- 2 oz Malibu coconut rum
- .5 oz blue curaçao
- 1 oz water
Instructions
- Add the grenadine to the bottom of a hurricane glass.
- Fill the glass with ice.
- Add the pineapple juice and coconut rum to a cocktail shaker. Shake, then very slowly pour over the top of the ice.
- In a separate glass, add the blue curacao and water together and stir to combine. Slowly pour over the top of the ice.
- Garnish your cocktail as desired and enjoy!
