This slushy made with watermelon juice and Malibu coconut rum tastes like summer in a glass – you’ll feel like you’re at a resort without leaving your house! Perfect for cooling down and relaxing on hot days.

The best investment I’ve made this summer is our Ninja Slushi machine. It’s awesome to have slushies on tap so we can cool down and get at buzz in the backyard anytime we want and we save a lot of money by skipping out on going to the bar.

There’s nothing more refreshing in hot weather than watermelon, so I really wanted to make a slushy with it as the base. To make it feel like something you’d drink by the pool at a resort I used Malibu coconut rum, and a white Jamaican rum for extra “oomph”. A little bit of acidity from lime juice balances out the flavors and brings it all together nicely.

Similar to my Ninja Slushi margarita, I use Simply Watermelon as the base. This makes it so quick and easy! In case you want to use fresh watermelon juice, I’ll also include instructions for how to substitute that. Don’t worry if you only have access to a blender, you can still make this cocktail. See how in the “tips” section.

Ingredients

A bottle of Simply Watermelon Juice, Malibu coconut rum, and light Jamaican rum all on a black background.
  • Simply Watermelon – Grabbing a bottle of this makes this recipe quick and easy, but you can substitute 4 cups fresh watermelon juice with 1 cup simple syrup.
  • Malibu – You can use the original Malibu coconut rum or the flavored versions, like pineapple and watermelon.
  • Rum – Use your favorite white or silver rum.
  • Lime – You’ll need 1/4 cup lime juice, which is the approximate yield from 1 medium lime.
  • Garnish – I recommend a small watermelon triangle or a lime wheel. Adding a mini bottle of Malibu is a fun touch.

Tips

  1. Secret ingredient for the best texture? Adding 1/4 teaspoon guar gum and mixing it in with the watermelon juice before adding to your machine will result in a smoother mouthfeel and help keep the slushy from separating.
  2. Use an insulated cup. An insulated cup can keep your slushy at the perfect consistency for hours, even by the pool or at the beach!
  3. Want to use a blender instead? Cut the ingredient measurements in half and replace the water with ice, then blend until smooth.

Malibu Watermelon Slushy

Ingredients

  • 5 cups Simply Watermelon
  • .75 cup Malibu coconut rum
  • .75 cup White or silver rum
  • .25 cup Lime juice, freshly squeezed
  • 1 cup Water

Instructions

  • Add all the ingredients into your Ninja Slushi machine.
  • Press "spiked slush" and wait for the machine to beep to signal it's ready.
  • Once cocktail is ready, place your cup under the leave and pull the handle to dispense. Garnish as desired and enjoy responsibly.
