A snack that’s simple, yet sophisticated – caviar and potato chips are the perfect combination of elegance and ease.

While I’m a huge fan of classic ways to serve caviar, one of my favorite things to do is mix it with a more casual food that we would generally think of as ordinary.
For example, a favorite appetizer of mine to serve on New Year’s Eve is waffle sticks with caviar and roe.
There’s just something about the playfulness of a high-end ingredient paired with a simple comfort food that seems to delight guests! It can also make caviar less intimidating to those who haven’t experienced it yet.
A friend of mine works at a popular seaside eatery in Malibu and he turned me on to potato chips and caviar a few years back. It quickly became my favorite beach snack!
The crispy, salty chip acts as the perfect delivery vehicle for the creamy, umami-packed pearls of caviar. Add a dollop of tangy crème fraîche, and you’ve got all the elements of a Michelin-starred bite, minus the tuxedo.
It’s perfect for impressing friends at intimate holiday parties, or just enjoying yourself during a bougie self-care Netflix and chill night (preferably alongside a caviar martini).
It’s truly a versatile snack! And why not add a little luxury to your life?
Ingredients
- Caviar – You don’t need to break the bank buying Osetra or Beluga for this recipe. Look for high-quality, budget-friendly options like hackleback or even salmon roe.
- Potato chips – You need a chip with structural integrity. Thick-cut or kettle chips are ideal.
- Crème fraîche – You can substitute sour cream for this in a pinch.
- Green onions – Don’t skip this, it brings needed acidity. Chives or diced red onions are good substitutes.
Tips
- Temperature is everything. Keep the caviar ice-cold until it hits the chip. Warm caviar? That’s a no-go.
- Avoid metal utensils. The metallic taste can interfere with the flavor of the caviar. Opt for a mother of pearl spoon or even plastic – yes, really.
- Customizable. Want to add chives, lemon zest, or even a touch of hot sauce? Go for it! Construct your perfect bite.
