These lobster sliders made with Hawaiian rolls are a fun way to serve lobster rolls to a crowd. Perfect for taking to the beach or on the boat.

During the summer, Janette and I try to make the most of our Southern California residency and get to the ocean as often as possible. One of our favorite beach day rituals is deciding what to pack in the cooler.
Whenever we’re feeling extra indulgent, we make these chilled lobster sliders that are served in everyone’s favorite bread – Hawaiian rolls.
While it is a luxurious sandwich, it fortunately only takes a few minutes to prep. You can even mix the lobster filling the night before and keep it in the fridge for a hassle-free morning.
Ingredients

- Lobster – Use fresh cooked lobster meat or thawed frozen. I bought fresh cooked at Eataly. Whole Foods and Restaurant Depot often have frozen lobster meat in stock.
- Mayonnaise – I prefer Duke’s for its rich flavor. Whatever brand you use, I recommend full-fat (not a reduced fat) mayo.
- Celery – Diced fresh celery stalks are a staple of a cold lobster roll, but they can be omitted, if you’d prefer.
- Old Bay – Use just enough Old Bay to season the lobster without overpowering it.
- Chives – These add a subtle garlic and onion taste. You can sub green onions or leave them out entirely.
- Bread – I recommend using original or butter Hawaiian Rolls. You can also use Hawaiian sub rolls or mini brioche buns.
- Lemon – Squeeze fresh lemon slices over the top right before serving.
Tips
- Make a hot version. Prefer a warmed lobster roll? Brush the sliders with butter and toast under your broiler for a few minutes until browned. Melt a stick of butter in a skillet over medium-low heat. Add lobster meat and warm for a few minutes before chopping and stuffing the rolls.
- Like it spicy? Add a half tablespoon of chili crunch or chopped Calabrian chilis to the lobster meat mixture.

Lobster Sliders

Ingredients
- 1 pound Lobster meat, roughly chopped
- 3 tablespoons Mayonnaise
- 2 stalks Celery, diced
- 1 tablespoon Chives, thinly sliced
- 2 teaspoons Old Bay
- 12 Hawaiian Rolls
- 4 Lemon wedges
Instructions
- Use a serrated knife to carefully cut out the middle of each Hawaiian roll, ensuring you don't cut all the way through the bottom.
- Mix the chopped lobster meat, mayo, diced celery, sliced chives, and old bay together.
- Stuff the lobster mixture into the Hawaiian rolls.
- Squeeze fresh lemon over right before serving. Enjoy!
