Ingredients
- 2 Bell Peppers
- 6 Eggs
- 1/2 Cup Baby Bella Mushrooms, sliced
- 1 Cup Spinach
- 1/4 Cup Green Onions, sliced
Instructions
- Preheat your oven to 400°F.
- Slice your bell peppers and remove the seeds. Place them in a baking dish.
- Crack your eggs in to a small bowl and whisk together. Evenly distribute among each pepper.
- Top with spinach, mushrooms, and green onions.
- Place baking dish and oven and cook for 25-35 minutes, until eggs are set.
- Serve immediately.
