Ingredients

  • 2 Bell Peppers
  • 6 Eggs
  • 1/2 Cup Baby Bella Mushrooms (sliced)
  • 1 Cup Spinach
  • 1/4 Cup Green Onions (sliced)

Instructions

  • Preheat your oven to 400°F.
  • Slice your bell peppers and remove the seeds. Place them in a baking dish.
  • Crack your eggs in to a small bowl and whisk together. Evenly distribute among each pepper.
  • Top with spinach, mushrooms, and green onions.
  • Place baking dish and oven and cook for 25-35 minutes, until eggs are set.
  • Serve immediately.
