Prevent your screen from going dark
Add the half bottle of red wine to a saucepan. If using, also add the split vanilla bean to the pot.
Bring to a simmer over medium heat. Allow to simmer until wine has been reduced to a syrup (should be around 1/4 cup of liquid).
Remove from heat and allow to cool to room temperature. Remove the vanilla bean.
In a large mixing bowl, add the mascarpone, cool whip, and red wine syrup. Use a hand mixer to blend until well combined.
Store in an airtight container and store in the refrigerator until serving time.
