Ingredients
2 Bell Peppers
6 Eggs
1/2 Cup Baby Bella Mushrooms, sliced
1 Cup Spinach
1/4 Cup Green Onions, sliced
Instructions
Preheat your oven to 400°F.
Slice your bell peppers and remove the seeds. Place them in a baking dish.
Crack your eggs in to a small bowl and whisk together. Evenly distribute among each pepper.
Top with spinach, mushrooms, and green onions.
Place baking dish and oven and cook for 25-35 minutes, until eggs are set.
Serve immediately.
